Featuring cacti in every corner and terracotta tables set again venetian walls and exposed concrete, Pabilto’s feels like stepping into Mexico City itself. Soft, flickering mood lighting glows from statues of the Virgin Mary perched along the walls, hold dripping wax candles amidst inside tables, swinging chairs and intimate booths that dot the restaurant and outdoor area.
From the team behind Tugun’s Caracara Cantina, Pabilto’s was born from a love of delicious food and quality tequila. This new Sanctuary Cove restaurant will be a step up from Caracara Cantina, offering a more premium dining experience. Owners Pete Baumgart and Paul Hodgkinson felt that locals and visitors alike would embrace authentic, quality Mexican with open arms.

“After the success of Caracara Cantina, we have been on the search for our next larger scale and more premium venture,” Pete explained. “In Australia we have an abundance of Mexican food, but the vast majority of the food is Tex-Mex style with copious amounts of sour cream, cheese and flavours that aren’t typically Mexican.” “We wanted to open a restaurant that serves genuine Mexican food and drinks. Our ethos
is simple; our food is fresh, colourful and full of flavour!” Using only high quality produce and suppliers, Pabilto’s promises the freshest fish tacos, Mexican bowls and an impressive list of Mexico’s best tequilas. Perfect for date nights or meals with friends, the menu is designed to be both shared amongst guests or perfect to enjoy for yourself.
Paul’s personal recommendation on a hot day is Pabilto’s red snapper ceviche, a dish inspired by the Cove’s stunning waterside location and crisp sea air. The menu features fish and prawn tacos that are not to be missed, having perfected the delicious balance between savoury and sweet with every bite. The impressive black out, wooden bar inside features an extensive list of 50 tequilas and mezcals, perfect for sipping or shaken into a mouth-watering margarita. “You can’t go past our coconut or watermelon margarita. Our house tequila is made with wild agave and we only use organic, freshly squeezed lime for our cocktails.”
Sanctuary Cove is no stranger to being the home of some of the Coast’s most famed restaurants and bars, with Pabilto’s set to become an institution of its own right. “We are young and fun, but take our restaurant service and quality extremely seriously,” he said.
